Seasons of Taste, Stories of SyahSyah provides an intimate dining destination that celebrates the beauty of the seasons through the lens of refined gastronomy. Set against the backdrop of Udaipur’s Aravalli hills, this unique restaurant redefines the art of dining with an exclusive 12-course tasting menu, where every dish reflects the richness of locally foraged and seasonal ingredients.
With a reservation-only policy, Syah creates an atmosphere of intimate luxury, ensuring that each guest enjoys the highest level of personal service. Every meal is a curated experience, crafted with precision and passion to evoke a sense of exclusivity and tailored perfection, where the essence of the dish is as important as the experience itself.

Our Story

A Vision Realized: The Birth of Syah
The seeds of Syah were planted during a memorable World Whiskey Day event at Dramz, New Delhi. With Chef Pankaj leading the kitchen and Deepak orchestrating operations and marketing, the event was a huge success. Paired with positive feedback from our guests, ignited the refinement of a new, intimate dining concept, a tasting menu restaurant designed to immerse guests in an intimate culinary journey.

The search for a perfect picturesque location brought us to the breathtaking landscapes of Ladakh, where Chef Pankaj took the lead in crafting an unforgettable dining destination that would embody our philosophy of refined gastronomy.

Syah’s Culinary Journey

► Ladakh – Established in 2016, Syah quickly became a beacon of innovative dining in Ladakh. In a remarkable two-year span, it garnered accolades from Conde Nast, being hailed as “the most exciting culinary experience in Ladakh,” drawing guests from around the globe.

► Udaipur – In 2019, Syah’s culinary legacy continued in Udaipur, offering an unparalleled 12-course, farm-to-table tasting experience. Set against the majestic Aravalli range, just 6 km from the city, Syah is where seasonality and sustainability meet elegance, inviting guests into an exclusive dining journey.

The Heart Behind Syah

The creation of Syah Udaipur was the culmination of a deep passion for the city’s timeless heritage and an unwavering pursuit of culinary mastery. Guided by the founder’s vision to craft an exclusive dining experience that honours Udaipur’s rich cultural tapestry, Syah was born to be more than just a restaurant, it is an embodiment of the region’s finest flavors, presented with an elegant, contemporary twist. Through a dedication to seasonal, locally sourced ingredients and a passion for elevating dining experiences, Syah has emerged as a distinguished destination, cherished by both locals and global visitors alike.

Chef Pankaj Sharma

Pankaj Sharma is the co-founder and head chef of Syah Udaipur, known for his refined, seasonal approach to modern Indian dining. Trained with The Oberoi and former Head Chef at Kandahar, Mumbai, he has also worked with Aman and The Lodhi. A recipient of the Bocuse d’Or India Award (2011) and Chef of the Year (2013), and recognised among “40 Under 40: India’s Most Exciting Young Chefs,” Chef Pankaj reimagines traditional recipes with modern technique, simplicity, and authenticity.

Deepak Dalal

Deepak Dalal is the co-founder of Syah Udaipur, leading guest experience, operations, and business excellence. His background spans luxury hospitality, brand building, and service design—from frontline roles at The Taj Mahal Hotel and The Oberoi, New Delhi to startup and leadership experiences with BIRA Beer and Sewara Hospitality. At Syah, he focuses on creating seamless, thoughtful experiences where operational precision and warm hospitality come together.

The menu reflects Ladakh’s landscape and climate, blending indigenous ingredients with modern technique to create an intimate dining experience that is both grounded and quietly expressive, staying true to Syah’s core values of simplicity, sustainability, and storytelling.
